KNOCK-OUT CAKE - Lamington cake with German chocolate and Coconut
A lamington is an Australian cake made from squares of butter cake or sponge cake coated in an outer layer of chocolate sauce and rolled in desiccated coconut. This Australian culinary icon, which consists of sponge cake dipped in chocolate and liberally sprinkled with fine desiccated coconut, is believed to have been created through an accident at work by a maid-servant to Lord Lamington, the thoroughly-British eighth Governor of Queensland.
This cake is traditionally know in Romania under the "Knock-Out Cake" name, because it will really knock your socks off!
The cake itself has a delicious glutenous taste, appealing to any baked goods lover. The cake is dunked in chocolate ganache and rolled in coconut flakes. Unlike the traditional recipe, which indicates cubes rolled in chocolate and coconut, our interpretation of the recipe features heart slices dipped in a decadent chocolate sauce and rolled in fine shredded coconut flakes.
